Farmers Cheese
| 4 Cups | Whole Milk |
| 2 Teaspoon | Citric Acid |
| 2 Teaspoon | Flake Salt |
Directions



Heat 4 cups of whole cow’s milk in a thick-bottomed pot over medium heat-just until it boils. Stir milk every minute or so to prevent sticking.
Turn off Heat, sprinkle in 1/2 teaspoon of citric acid and stir thoroughly with 5 quick strokes..
Allow curds and whey to rest for 10 minutes. Line your colander with cheese cloth (rise it thoroughly and wring it out).
Pour the curds and whey through the cheese cloth. Allow the whey to drain completely. This should take 5-10 minutes.
Add your spices, and a pinch of salt. Plate

But I have to caution you that not all farmer cheese varieties have probiotic cultures. Some use an acid like lemon juice or vinegar to separate the milk into curds and whey. So, if you’re looking for gut-friendly farmer cheese, be sure to check the ingredient list for “live active cultures.” For this recipe, we used citric acid.
In addition, farmer cheese is fantastic for promoting bone health! Calcium is crucial for healthy bones and tissues, but it’s often lacking in the American diet. One ounce of farmer cheese contains 200 milligrams of calcium, which is 15% of your recommended daily value. Pretty cool, right?
