Basil & Cashew Pasta

Basil & Cashew Pasta INGREDIENTS 3 portions of pasta or brown rice pasta 100g cashews 1 ripe avocado, peeled and roughly chopped Juice of 1 ½ lemons 25g fresh basil 4 tablespoons olive oil 3 tablespoons water 1 tablespoon nutritional yeast 1 garlic clove, peeled Pinch of sea salt METHOD Place 50g of the cashews into a food processor and pulse for a few seconds.  Toast them in a frying pan until they are golden brown.  Sprinkle on top of the pasta as garnish. Add all the rest of the ingredients, except the pasta in a blender and blend until smooth and creamy. Add water as needed. Toss your pasta with blended ingredients and sprinkle with the toasted cashews. I did not use nutritional yeast in this recipe as it has an after taste to me.   You may notice non traditional ingredients in my recipes. Mash Potatoes Pancakes

The Preparation Ingredients: Mash Potatoes, 1/4 cup bacon, 1/4 cup shredded cheese, 2-3 eggs, 1/4 cup wheat flour, green onions, salt, pepper, and garlic. Directions: Combine mixture into a bowl. Put 1 tsp of olive oil into a skillet. Then, form mixture into a patty and pan fry on each side for 3 minutes or until golden brown. This dish is very filling and good for cold mornings when you just want some good old comfort food. Cheers

Shrimp Linguini W/Alfredo Sauce

The Preparation Ingredients: Shrimp, cream, wine, parmesan cheese, parsley, paprika, salt, pepper, onions, garlic, olive oil, paprika, salt, pepper and linguini. Directions: Saute shrimp in olive oil for 2 minutes on each side. Remove from the pan to avoid over cooking. Saute onions and garlic in the same pan until golden brown. Then add 3/4 cups of wine to the mixture and let simmer for 2 minutes. Next, add 2 cups of cream and 3/4 cups of parmesan cheese and let simmer for 2 minutes. Do not let it boil. Add linguini and shrimp to mixture. Then, top with parley and parmesan cheese to taste. Cheers!
