To make yogurt at home, you must first heat the milk to 180 degrees Fahrenheit to eliminate harmful microbes. Heating also thickens the yogurt by changing the protein structure. After heating, the milk should be cooled to between 112- and 115-degrees Fahrenheit. This temperature range is crucial for introducing the starter mix of good bacteria. Check the temperature with an instant-read thermometer.
Next, add the starter mix to the warm milk. You can use a starter or three tablespoons of pre-made yogurt that contains Lactobacillus bulgaricus and Streptococcus thermophilus. These bacteria are good for your starter mix. Other beneficial bacteria include Lactobacillus acidophilus and Bifidobacterium lactis. Stir the starter mix with the milk to distribute the good bacteria throughout it.
Pour the milk and starter mix into jars and incubate for 7-9 hours. It’s crucial to maintain a consistent, lukewarm temperature to promote the growth of good bacteria. The longer you incubate the yogurt, the thicker and tangier it will become. After about 8 hours, your yogurt should be ready.
Finally, cool the jars of yogurt in the fridge for a couple of hours until it sets and thickens even further. You now have a delicious, healthy, thick, and creamy yogurt. Enjoy!
