Hi Angels Working on Earth Family!
If you’re looking for a pasta dough recipe, you should try ” Giadzy” which I recently discovered on the Williams Sonoma website. It contains Petra flour, Semolina flour, sauce, yeast, and chilies. You may also use some of the ingredients to make pizza dough.
Semolina flour is highly nutritious and contains several essential nutrients such as B vitamins, iron, protein, and fiber. It also includes vitamin B complex and E, carbohydrates, protein, dietary fibers, and trace minerals like potassium, zinc, iron, and magnesium. Semolina flour is an excellent choice for anyone looking to maintain a healthy weight.
Petra Flour is versatile and healthy for all your baking needs. It is full of vital vitamins and minerals, including fiber, iron, and vitamin B6, making it a more nutritious alternative to conventional wheat flour. Petra 9 Whole Wheat Flour, in particular, is produced using a unique process that preserves even more fiber, protein, vitamins, minerals, and natural oils than other options on the market. Its exceptional stability ensures consistent performance in all your favorite doughs. Petra Flour is a great choice for bakers, pastry chefs, and cooks alike.
I’m really passionate about cooking, and I always strive to create delicious dishes that are enjoyable with every bite. I highly recommend trying Petra Flour and Semolina flour today to elevate your baking game to the next level!

Let’s make some delicious pasta together!

First, grab a large bowl and whisk together the flour and semolina. Create a well in the center and add the eggs and egg yolks. Use a fork to break up the eggs and gradually draw flour from the edges of the well into the mixture.
When the dough becomes too firm to mix with the fork, don’t worry, just get your hands in there and start kneading it. Keep adding flour until the dough no longer sticks to your hands.
Now, transfer the dough to a lightly floured surface and knead it for 8 to 10 minutes until it becomes smooth and pliable. Wrap the dough tightly in plastic wrap and allow it to rest for at least 30 minutes.
Next, let’s roll out the pasta! If you have a pasta roller, divide the dough into four pieces and start rolling it out. If you’re using a rolling pin, divide the dough in half and roll it out as thin and evenly as possible. Then, cut the dough into even ribbons using a paring knife. Dust the cut pasta with flour to prevent sticking.
If you don’t plan to cook the pasta right away, you can transfer it to a sealable plastic bag and freeze it for up to 3 months.
When you’re ready to cook the pasta, bring a large pot of generously salted water to a boil. Add the pasta and check for doneness after just 1 minute. Fresh pasta cooks very quickly! As soon as it is just al dente, which should take no more than 3-4 minutes, drain it, reserving some of the cooking water if desired for saucing the pasta. Toss the pasta with your favorite sauce and loosen it with some of the reserved cooking water. Then, serve and enjoy!
Coach’s Table

“I made the pasta quite thick, with a rustic texture. I paired it with lobster, spinach, garlic, butter, and cream sauce. The pasta would have been even better if it was a bit thinner. Next time, I plan to use a pasta maker to achieve thinner noodles. However, the thickness of the noodles worked well in a rustic chicken noodle soup!” Here is my version of chicken noodle soup right now.
If you are a pasta lover, there’s no need to give up your favorite dish! With various pasta alternatives available in the market, low-carb pasta is an excellent option for those looking to make healthier choices. Low-carb pasta is made from alternative ingredients like almond flour, coconut flour, or bean flour, and is a healthier alternative to traditional wheat-based pasta.
Vegetable-based pasta, such as spiralized zucchini, sweet potato gnocchi, and cauliflower-based noodles, are also great options. Although the nutritional value and flavor of low-carb pasta may vary, it’s essential to find a type that you find satisfying. The six healthiest flours are almond, coconut, whole wheat flour, oat, cassava, and chick pea,
Low-carb pasta is perfect for people following a low-carb or keto diet, individuals with diabetes, or anyone looking to reduce their overall carbohydrate intake.
Other pasta options made from chickpeas and lentils are also high in fiber and protein and can be just as delicious.
Love!
