Hi guys! The purpose of posting these dishes are to encourage those who are curious about vegan cuisine to try it. I post dishes that are from the GreenFare Organic Cafe’s 21 day Vegan kickstart menu. At the end of the program, I will post my own creative dishes. Some will be vegan, and some will be dishes that inspire me.

What have I learned today? Stomach and satiety. Your stomach can detect how bulky your food is. The satiety point reflects fullness. The theory is that a bite of chicken isn’t bulky and doesn’t weigh enough to give you the full feeling. So, by the time you feel  over consumed more calories than you thought(i.e. fat and calories). Beans are different than chicken fat. It’s not designed for storing calories. The theory here is that beans and fruit have just enough calories to give the seeds it’s start in life. There are no greasy layers of fat on these foods. How about that?

This dish was excellent. It was filling. Almost like Mac and cheese. I find that I’m not able to finish eating the portions. I’m full and am able to stop when full vs eating because its there. But! I miss the desire to eat. The lust! The anticipation of eating something cheesy or savory.
