I must say, I am struggling right now. It’s day 3, and I am now eating day twos dinner for lunch. I hit a wall last night. I felt very nauseous. Very weak. The research says my body is adjusting to the diet. Everyone is different. The suggestion is to start slow, and to gradually introduce the vegan diet. Advice: 1. Educate yourself, 2. Crowd out animal products with tons of delicious filling plant based foods. 3. Find recipes for inspiration(vegan). 4. Start with the basics and 5. Take it one day at a time. And don’t forget your will need B12 and calcium as the diet is plant based. Research, research, and research some more.

So, I will take it one day at a time. I will eat more fruit, veggies and nuts. Today, I ate a small bowl of mac and cheese. Not vegan, but I felt my strength return.
