Hi Angels Working on Earth Family!
Are you a pizza lover? Picture this: a pizza adventure where puff pastry takes center stage. When inspiration struck, I longed for something light as air, delightfully flaky, nourishing, and so creamy you can’t resist another bite.
Cream cheese swirling with lemon zest and a whisper of vanilla is pure joy. Wanting to keep things light, I turned to puff pastry as my secret weapon. Its delicate, flaky layers embrace the creamy cheese, burst of blueberries, and crunch of pistachios. The result? A surprising burst of flavors I just can’t resist.
What thrills me most are the bold flavors and dazzling colors: emerald pistachios, golden brown pastry, midnight-blue blueberries, and the dreamy creaminess of whipped cheese. I picture myself on a sunlit pier, watching the moon linger in the daytime sky.
The best part? It’s wonderfully easy to make. I’m excited to share a straightforward, step-by-step recipe so you can bring this delicious creation to life in your own kitchen!
Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper so your pastries lift off easily and cleanup is a breeze.
Gently unfold the thawed puff pastry on a lightly floured surface and smooth out any creases with a rolling pin. Slice the sheet into 6 even rectangles using a sharp knife or pizza cutter.
In a small bowl, blend the softened cream cheese, granulated sugar, vanilla extract, and lemon zest (if you like a citrusy touch). Whip until silky smooth and creamy.
If using frozen blueberries, toss them with 1 tbsp of plain flour in a small bowl to absorb excess moisture. Fresh blueberries do not require this step.
Arrange the puff pastry rectangles on your prepared baking sheet, leaving about 2 inches between each one. Dollop a generous tablespoon of cream cheese filling into the center of each rectangle, leaving a neat border around the edges.
Scatter the blueberries over the cream cheese on each pastry and gently nestle them into the filling. For a beautiful, puffed border, lightly score each pastry with a knife about half an inch from the edge, being careful not to cut all the way through. Or, if you prefer, fold the edges in just a bit for a rustic look.
For a golden finish, whisk together the egg and 1 tablespoon of milk in a small bowl. Lightly brush the edges of each pastry with this egg wash. Bake for 15 to 20 minutes, or until the pastries are puffed and the edges are beautifully golden. The cream cheese filling should be set but still soft.
While your pastries bake, whip up the glaze. In a small bowl, whisk together icing sugar, 1 tablespoon milk or cream, and a splash of vanilla extract until smooth and glossy. Add a little more milk for a thinner drizzle.
Once the pastries are out of the oven, let them cool on the baking sheet for 5 to 10 minutes. Finish with a generous drizzle of glaze and enjoy them warm or at room temperature.
I omitted sugary glazes from today’s recipe to better manage my sugar intake during training.
Love!
