Mushroom & Swiss Burger with Sweet Potatoe Fries

Ingredients

  • 1 Whole Sweet potato
  • 4 oz Cremini mushrooms
  • 1 whole Scallion
  • 10 oz Ground beef
  • 2 oz Lemon aioli
  • 2 oz Swiss Cheese
  • 2 Whole Brioche buns

Directions

  1. Preheat Oven to 450 degrees
  2. Slice sweet potatoes lengthwise
  3. Drizzle sweet potatoes with olive oil, and season with salt and pepper to taste.
  4. Spread in a single layer on a baking sheet.
  5. Roast for 20-25 minutes.
  6. Prep cremini mushrooms, and remove stems
  7. Slice into 1/4-inch slices.
  8. Trim and thinly slice scallions, separating whites & greens
  9. Season beef patties with steak seasoning and 2 teaspoons of aioli lemon sauce. Mix evenly.
  10. Form 2 patties, 1/4 inch thick. Season with salt and pepper. Heat skillet on medium heat and cook patties 3-5 minutes on each side.
  11. Flip patties and Swiss cheese.
  12. Cover with lid and cook for 3-5 minutes until fully cooked or desired doneness. Let Swiss cheese melt..
  13. Heat pan and add mushrooms and scallion whites. Season with steak seasoning, and salt and pepper to taste.
  14. Cook for 5-6 minutes til mushrooms soften.
  15. Add 2 tablespoons of water, and 1 tablespoon of butter.
  16. Cook for 2-3 minutes or until butter is melted.
  17. Transfer cooked sweet Potatoe fries into a bowl, and scallion greens and toss. Season with salt and pepper,
  18. Toast buns with cut side up on baking sheet, and toast 3-4 minutes or until brown.
  19. Plate your dish. Spread aioli sauce on buns. Top with beef patties, and mushrooms.
  20. Place sweet potatoes fries on the side.
  21. Garnish with green scallions.
