Blueberry Crosta Biscuit

Nothing beats the taste of juicy, sweet blueberries any time of day! My family has this amazing secret recipe for tea cakes that I absolutely love, but sadly, no one wrote it down. So, I decided to whip up my own version using blueberries! While the original recipe is still a mystery, I’m excited to share this alternative recipe that’s just as delicious. Enjoy!

Ingredients:

– 1 1/2 cups all-purpose flour (plus more for dusting)

– 3 tablespoons of sugar

– 1 1/2 teaspoons baking powder

– 1/2 teaspoon salt

– 3 tablespoons cold unsalted butter

– 3 cups of your favorite fruit

– Sugar to taste

– 1/2 teaspoon cornstarch (optional)

– Zest and juice of your choice

– A pinch of salt

Instructions:

1. Preheat your oven to 375°F and line a baking sheet with parchment paper or aluminum foil.

2. Combine the fruit and sugar in a bowl and let it sit at room temperature for 20 minutes.

3. Transfer the fruit mixture to a saucepan and let it bubble over medium heat. Stir occasionally.

4. If desired, mix 1/2 teaspoon of cornstarch with 1 teaspoon of cold water and add to the fruit mixture. Stir until it thickens (around 1-2 minutes).

5. Remove the fruit mixture from heat and add zest, juice, and a pinch of salt.

6. In a separate bowl, mix flour, sugar, baking powder, and salt. Cut the cold butter into small pieces and mix it into the dry mixture until it forms coarse crumbs.

7. Flour a surface and roll the dough to the desired size. Transfer the dough to the baking sheet.

8. Fill the center of the dough with the fruit mixture or any other filling of your choice, leaving enough border space to create a crust.

9. Fold the border over the fruit filling, leaving the center exposed. Be creative and have fun with it!

10. Garnish with sugar or any desired topping.

11. Bake the tea cake in the oven until the crust turns golden brown and the filling starts to bubble (around 20-30 minutes).

12. Let the tea cake cool or serve hot. Enjoy!
