Ingredients

  • 13 Oz Chicken breast
  • 1/2 oz Crumbled bacon
  • 1 Oz Blue Cheese
  • 1 Tbsp Fig Spread
  • 8 Oz Green Beans
  • .6 Oz Butter
  • 1/2 Oz Crispy Fried Onions
  • 1 Yellow Onion
  • 1 Oz Light Cream Cheese
  • 1/2 tsp Garlic Salt
  • Olive Oil

Directions

  1. Prep all of your ingredients
  2. Over medium heat add 2 tsp of Olive Oil to a pan. Heat pan to medium heat.
  3. Add onion cook til browned, 10-13 minutes. Add water to the pan if becomes dry.
  4. Cook chicken. Add 2 tsp Olive oil to pan and heat over medium heat. Cook chicken until browned, 5-7 minutes per side, internal temperature of 165. Place chicken on plate, and tent with foil. Reserve juices.
  5. Add green beans and garlic salt to pan with onion. Cover and stir occasionally, until tender, 6-8 minutes
  6. Add more water if the green beans need more time.
  7. Place green beans on plate.
  8. Add half the blue cheese, and cream cheese to pan. Reserve some blue as garnish. Add 1/3 cup of water to hot pan and stir to combine. Bring to a simmer.
  9. Make the fig jam. Use pan to cook chicken on medium low heat. Add fig spread (or your choice), bacon, and 1 Tbsp water to a hot pan, and stir to combine. Let it simmer.
  10. Remove from the burner and add in butter.
  11. Plate the dish, topping the chicken with fig jam, and vegetables with blue cheese fondue, and onions. Garnish with blue cheese.
