Gourmet Meatloaf with Potatoes & Green Beans

Meat Loaf with Balsamic Tomato Sauce, Roasted Potatoes & Green Beans

Ingredients

  • 12 Oz Yukon Gold Potatoes
  • 1 Yellow Onion
  • 1 Garlic Clove
  • 1/4 Cup Panko Bread Crumbs
  • 1 TBSP Italian Seasoning
  • 1.5 Oz Tomato Paste
  • Beef Broth
  • 6 Oz Green Beans
  • 1 Cup Mozzarella Cheese
  • 5 tsp Balsamic Vinegar

Directions

  1. Prep the ingredients.
  2. In a large bowl, combine the panko, garlic, 2 TBSP water, and 2 tsp Italian Seasoning.
  3. Add beef, 3/4 tsp salt, and pepper, mix to combine, then form into two loaves. Place on a lightly oiled baking sheet.
  4. Toss potatoes on a second baking sheet and drizzle with olive oil, remaining Italian seasoning, salt and pepper. Roast on top rack until browned crisp, 20-25 minutes.
  5. Place sheet with meatloaves on middle rack, roast for 10 minutes.
  6. Make the sauce. Brown onions in a pan. Start by adding olive oil, and heat over medium-high heat. Stir onions for 8-10 minutes.
  7. Add vinegar, 2 TBSP water, and 1 tsp sugar. Stir until onions are caramelized and Jammy, 2-3 minutes. Stir in tomato paste, and stock until combined.
  8. Stir in 1/4 cup of water, and bring to a simmer, cook until thickened, 1-2 minutes. Remove from the heat and season with salt and pepper.
  9. Remove the meatloaf from the oven, 10 minutes, and add the green beans to the opposite side.
  10. Time to roast the green beans. Toss green beans on a baking sheet. Drizzle with olive oil, salt and pepper.
  11. Return meatloaf and green beans to the oven until meatloaf is cooked through, and beans are browned. 10-15 minutes more.
  12. Top the meatloaves with sauce, and mozzarella in the last 3 minutes.
  13. Plate.
