
Meat Loaf with Balsamic Tomato Sauce, Roasted Potatoes & Green Beans
Ingredients
- 12 Oz Yukon Gold Potatoes
- 1 Yellow Onion
- 1 Garlic Clove
- 1/4 Cup Panko Bread Crumbs
- 1 TBSP Italian Seasoning
- 1.5 Oz Tomato Paste
- Beef Broth
- 6 Oz Green Beans
- 1 Cup Mozzarella Cheese
- 5 tsp Balsamic Vinegar
Directions
- Prep the ingredients.
- In a large bowl, combine the panko, garlic, 2 TBSP water, and 2 tsp Italian Seasoning.
- Add beef, 3/4 tsp salt, and pepper, mix to combine, then form into two loaves. Place on a lightly oiled baking sheet.
- Toss potatoes on a second baking sheet and drizzle with olive oil, remaining Italian seasoning, salt and pepper. Roast on top rack until browned crisp, 20-25 minutes.
- Place sheet with meatloaves on middle rack, roast for 10 minutes.
- Make the sauce. Brown onions in a pan. Start by adding olive oil, and heat over medium-high heat. Stir onions for 8-10 minutes.
- Add vinegar, 2 TBSP water, and 1 tsp sugar. Stir until onions are caramelized and Jammy, 2-3 minutes. Stir in tomato paste, and stock until combined.
- Stir in 1/4 cup of water, and bring to a simmer, cook until thickened, 1-2 minutes. Remove from the heat and season with salt and pepper.
- Remove the meatloaf from the oven, 10 minutes, and add the green beans to the opposite side.
- Time to roast the green beans. Toss green beans on a baking sheet. Drizzle with olive oil, salt and pepper.
- Return meatloaf and green beans to the oven until meatloaf is cooked through, and beans are browned. 10-15 minutes more.
- Top the meatloaves with sauce, and mozzarella in the last 3 minutes.
- Plate.
