Mini Enchiladas

Ingredients

  • 1/4 Cups Scallions, 1 Cup cheddar Cheese, 1/2 Tsp Cumin, 1 Tsp Garlic Powder, 1 Tsp Cayenne Pepper, 1/2 Cup Diced Onions, 1 or 1/2 Cup Black Beans, 1 Cup Tomato Sauce, Ground Turkey or Beef, 6 White Corn Tortillas, Sour Cream, and 4 Ramekins.

Directions

  1. Use a cookie or biscuit cutter to cut out eight tortilla circles. Toast the scraps in the oven till golden brown. Let cool and crumb in a food processor.
  2. Sautee the meat until done. Add the spices, tomato sauce, beans, and the diced onions to the meat mixture. Cover with a lid and cook for 10 minutes until the onions soften.
  3. Toast the rounded white tortillas until golden. Be careful not to overcook the tortillas as you want them to firm but not crispy.
  4. Place one rounded tortilla in the ramekin, and spoon on the meat sauce until it reaches the 3/4 of the ramekin.
  5. Sprinkle cheddar cheese over the meat sauce. Then, place another rounded tortilla over the meat sauce.
  6. Sprinkle cheese over the tortilla, and garnish with scallions.
  7. Place in the oven for approximately 20 minutes at 350 degrees.
  8. Garnish with sour cream and scallions
