You Can’t Beat Beets! Preparation: Ingredients: Roasted beets, Pecans, and Spring Mix. Dressing: Balsamic vinegar, olive oil, Dijon mustard, pepper, and kosher salt. Directions: To roast the beets remove outer skin, slice into rounds and place on parchment paper. Place the beets in the oven for approximately 30 minutes. Whisk the honey, olive oil, pepper and salt in a bowl. Add dressing to spring mix and beets. Cheers!

Directions: Saute shrimp in olive oil for 2 minutes on each side. Remove from the pan to avoid over cooking. Saute onions and garlic in the same pan until golden brown. Then add 3/4 cups of wine to the mixture and let simmer for 2 minutes. Next, add 2 cups of cream and 3/4 cups of parmesan cheese and let simmer for 2 minutes. Do not let it boil.
