Mash Potatoes Pancakes

The Preparation Ingredients: Mash Potatoes, 1/4 cup bacon, 1/4 cup shredded cheese, 2-3 eggs, 1/4 cup wheat flour, green onions, salt, pepper, and garlic. Directions: Combine mixture into a bowl. Put 1 tsp of olive oil into a skillet. Then, form mixture into a patty and pan fry on each side for 3 minutes or until golden brown. This dish is very filling and good for cold mornings when you just want some good old comfort food. Cheers

Royal Beet Salad

You Can’t Beat Beets! Preparation: Ingredients: Roasted beets, Pecans, and Spring Mix. Dressing: Balsamic vinegar, olive oil, Dijon mustard, pepper, and kosher salt. Directions: To roast the beets remove outer skin, slice into rounds and place on parchment paper. Place the beets in the oven for approximately 30 minutes. Whisk the honey, olive oil, pepper and salt in a bowl. Add dressing to spring mix and beets. Cheers!

Seared Scallops Over Lemon Zested Mash Potatoes

Preparation Ingredients: 3 cups mash potatoes, 1 tsp lemon zest, 1/4 cup cream, 1 tsp butter, 1 tsp olive oil and 1 cup spinach. Directions: Pan sear the scallops, 2-3 minutes on each side in butter until golden brown. Steam spinach for 5 minutes. Add lemon zest, cream, and spinach to mash potatoes. Place scallops over mash potatoes. This is a delicious dish that takes no time to make. Cheers!

Shrimp Linguini W/Alfredo Sauce

The Preparation Ingredients: Shrimp, cream, wine, parmesan cheese, parsley, paprika, salt, pepper, onions, garlic, olive oil, paprika, salt, pepper and linguini. Directions: Saute shrimp in olive oil for 2 minutes on each side. Remove from the pan to avoid over cooking. Saute onions and garlic in the same pan until golden brown. Then add 3/4 cups of wine to the mixture and let simmer for 2 minutes. Next, add 2 cups of cream and 3/4 cups of parmesan cheese and let simmer for 2 minutes. Do not let it boil. Add linguini and shrimp to mixture. Then, top with parley and parmesan cheese to taste. Cheers!
