Seared Scallops Over Lemon Zested Mash Potatoes



3 cups mash potatoes, 1 tsp lemon zest, 1/4 cup cream, 1 tsp butter, 1 tsp olive oil and 1 cup spinach.


Pan sear the scallops, 2-3 minutes on each side in butter until golden brown. Steam spinach for 5 minutes. Add lemon zest, cream, and spinach to mash potatoes. Place scallops over mash potatoes.

This is a delicious dish that takes no time to make. Cheers!
